Pistachios get its green pigment in the pistachio nut as a result of chlorophyll, the same pigment that makes the leaves green.
Approximately 98% of the pistachio nuts produced in the United States are from California.
The FDA recently announced that eating nuts, such as pistachios, may help reduce the risk of heart disease when eaten as part of a diet low in saturated fat and cholesterol.
We are conventional growers but do everything we can to limit the amount of pesticides we spray on our crops. Generally, pistachios are not a crop that require extensive spraying, but there are a few key times in the year when we cannot avoid it. Further, we use many sustainable practices such as composting and cover cropping to help reduce the amount of synthetic fertilizer used.
For long term storage, pistachios should be stored in an air tight container in the refrigerator. To restore crispness, remove from packaging and heat in the oven at 180 degrees F for 10-15 minutes.
